Background

The oldest wine in our portfolio, crafted from our very first harvest of Saperavi. Despite its age, it continues to impress with vibrant aromas and remarkable freshness, revealing not only its maturity but also its enduring potential for further ageing.

Terroir

Saperavi grapes are cultivated in distinct plots across Tsinandali’s south-east-facing vineyards, nestled 600-700 meters above sea level. Surrounded by oak forest, these slopes feature well-drained clay-limestone soils that perfectly express the character of each variety within the Tsinandali PDO.

Viticulture

Our philosophy begins in the vineyard, where we believe exceptional wine is born in harmony between vine and terroir. Every detail matters - from the earthworms enriching the soil to the thoughtful care behind each vineyard practice. Through cover cropping and sustainable methods such as pest mating disruption, we nurture a balanced ecosystem where nature and the vine thrive together.

Vinification

Saperavi grapes are harvested and processed with exceptional care. Fully ripe berries undergo fermentation with skins in stainless steel tanks at 25-26°C for two to three weeks, ensuring optimal extraction of colour, structure, and aroma. After fermentation, the wine proceeds to its ageing phase in Burgundy oak barrels, where it develops further depth, complexity, and refinement.
